Sourdough Discard Apple Muffins

These are the perfect fall time treat! And a great way to use up some of your discard! You will need...


1 cup all-purpose flour
½ cup sugar
¼ cup packed brown sugar
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
1 tsp baking soda
1 cup sourdough discard
⅓ cup avocado oil
1 large egg
1 tsp vanilla extract
1 cup diced apples

Directions: Preheat oven to 350° F. Add all of your dry ingredients into a bowl. Mix. Next, add the remaining ingredients, except for your diced apples. Mix. Add apples. Add mix into lined muffin pan. Bake for 25-30 minutes or until a toothpick comes out clean! Makes approximately 12 muffins.
