Nutrient Dense Cheeseburger Soup

This recipe is a winter favorite at our house! Loaded full of nutrient dense ingredients, very filling and easy to come together!

You will need:

4 small potatoes

1 small white onion

1 cup carrots

1/2 cup celery

1 tsp basil

1 tsp parsley

3 cups broth (I've used both chicken and beef)

1 lb. ground beef (I like to do 1.5 lbs. sometimes for extra meat)

3 tbsp butter

1/4 cup flour

2 cups milk

1/2 tsp black pepper

salt to taste

16 oz shredded cheese

 

directions: Wash and dice all of your vegetables into the desired size. Place into crockpot with your basil and parsley. Cover with broth and cook on low heat for 6 hours (or until veggies are tender.) About 45 minutes before serving, brown your ground beef into a large skillet and add it to your crockpot. In the small skillet melt your butter. Once melted, whisk in your flour and cook until golden brown and bubbling. Next, whisk in your milk, salt and pepper. Pour mixture into crockpot and stir to combine. Add your cheese and stir. Cook another 30 minutes and enjoy!
