Sourdough Buns/Rolls

Sourdough rolls (we also use these as hamburger buns, etc, and they are delicious!)
ingredients:
350g room temperature water
60g active starter
1 tbsp raw honey
500g bread flour
9g sea salt
directions:
add water to your bowl followed by your starter. whisk. next, add in your honey and whisk again. then add flour and salt and whisk into a shaggy dough. cover and set aside.
30 min later, perform a set of stretches of folds. do these every 30 minutes for a total of 2 to 4 sets of stretches and folds. 
about 8 to 10 hours later - or when your dough has doubled in size, is dome shaped, has a few bubbles and is not sticky- dump your dough onto a floured work surface and divide into 8 sections. shape them each into a ball and then cover for about 1 hour or until doubled. 
once doubled, add them to a buttered dish, then cover the rolls in butter as well. bake in the oven at 325°f for 30 to 35 minutes or until slightly browned. cover them in butter again and enjoy!!
