The Best Ever Zuchinni Bread

This is my Mom's zuchinni bread recipe, so I grew up on this bread. I friggen LOVE it. It is delicious warm with a little grass fed butter. My mom always made a bunch in bulk and froze a lot of it to have for the year! This recipe makes 2 regular sized loaves or about 15 cupcakes! It is the perfect way to use up thay zucchini from the garden!


3 eggs 

¾ cup avocado oil

1½ cups sugar 

1 tbsp vanilla

2 cups grated zucchini 

2 cups flour

¼ tsp baking powder

2 tsp baking soda

1 tsp salt

1 tbsp cinnamon


1. Preheat oven to 350°F. Add eggs to stand mixer or large bowl and beat until foamy.

2. Add your oil, sugar and vanilla. Mix again. 

3. Add your zucchini, flour, baking powder, baking soda and salt. Mix. 

4. Divide mix into 2 loaf pans or cupcake pans. Bake 1 hours for loaves, 25 minutes for cupcakes. Cook until toothpick comes out clean. Enjoy!

What would the portion be if I want to substitute the sugar for maple syrup?


I don’t under-stand the difference between baking soda aber baking powder. Sorry. Translator says “Backpulver”.
