Unstuffed Cabbage Roll Casserole

This recipe is nutrient dense and delicious! We like to have this with pasta or organic basmati rice. It makes a delicious and quick winter meal that is filling and hearty. 

You will need:

3 tbsp butter

1 to 1.5 lbs ground beef (we like extra beef sometimes)

1 sweet onion

1 bell peppers

3 garlic cloves 

14oz fire roasted peppers (or diced tomatoes)

½ tsp paprika

½ tsp dried oregano 

½ tsp garlic powder

½ tsp onion powder

Salt and pepper to taste

1 small head or cabbage

2 cups shredded cheese

 

Directions:

1. Saute butter, beef, onion and bell pepper over medium heat in a Dutch oven. Cook until beef is brown and onions are translucent.

2. Add garlic and sauce for 1 more minute.

3. Stir in roasted peppers, spices, salt and pepper. Top with cabbage. Cover and cook about 15 to 20 minutes or until cabbage is tender.

4. Top with cheese. Cover until melted.
